Chocolate Brownie

Jo's special brownie recipe which is always a crowd pleaser!

Gas: Roast / low heat
Weber Q: Roast / low heat
Charcoal: Roast

Grilling time: 30 minutes
Servings: 12

125g plain chocolate
150g butter
285g caster sugar
3 eggs
1 tsp vanilla extract
150g pecan nuts (broken)
225g chocolate pieces
125g plain flour

 

Method
1. Line a large Weber foil tray with greaseproof paper and grease lightly.

 

2. Melt the plain chocolate and butter in a pan (either on the barbecue or cooker).
 

3. Remove from the heat and add the sugar. Stir well until all the sugar is dissolved.
 

4. Add the eggs, one at a time allowing each to be properly folded into the mixture before adding the next.
 

5. Add the vanilla extract, pecan nuts and chocolate pieces.
 

6. Stir in the flour thoroughly and pour into the prepared tray.
 

7. Place on the barbecue and cook using the indirect method for 30 minutes keeping the lid closed as much as possible. When a sharp knife or skewer is inserted the tip should be sticky and not springy to the touch like a sponge cake. Over cooking will lead to dryness and the brownies won’t be fudge like. Serve hot or cold.
