In the kitchen:
  1. Melt the chocolate and the butter together on the side burner or on the stove and ­allow it to melt slowly over simmering water, bain marie style.
  2. Meanwhile, in a mixing bowl, break the eggs add the sugar and mix them until the butter is pale.
  3. Sift the flour and cocoa powder together in a bowl.
  4. Mix the chocolate and ­butter carefully with the egg and sugar mixture. Then fold in the flour and cocoa.
  5. Spray non-stick spray in the pudding cups and then pour in the mixture.
At the barbecue:
  1. Prepare the barbecue for indirect heat, 180°C. Place two upturned drip pans over indirect heat.
  2. Place the cups on the dripping pans allowing them to bake for 7 to 8 minutes.
Tip: Before it is baked, the surface of the cake will have a sheen to it, but after the cake is done the sheen will be gone. You can’t do a toothpick test if you want a molten center. The cake can also be baked like a normal cake. In this case, the baking time will be about 3 to 4 minutes longer.
